Romaine Salad Boats Recipe
This crispy romaine lettuce salad dish makes a great appetizer as well as a dinner salad.

  • 5leaves romaine lettucewashed and thoroughly dried
  • 4tbls “Olivaise” Oil-free vegan Mayonnaise 3–4 Tbls lime or lemon juice or other oil-free vegan creamy style dressingsee link below for “Olivaise”
  • 3oz Tangy Vegan Feta Bitessee link below
  • 1/2cup fresh herbslike cilantro or parsle
  1. In a measuring cup with a pouring spout, add the “Olivaise” and the lemon or lime juice and mix well with a fork.
  2. Place the lettuce leaves on a single layer of your platter.
  3. Pour a little dressing on each of the leaves.
  4. Add the tangy bites, 2–3 per leaf.
  5. Pour more dressing as desired.
  6. Add the fresh herbs on top.
